Never forget a truffle, whatever type, is a mushroom.

Storing it is always a delicate matter: if there is too much humidity mould will appear.

Fresh truffles need to be eaten very quickly.

All truffles lose weight and aroma, especially the Tuber Magnatum which is very volatile. This is why truffles are never left in open air.

In order to preserve all the olfactory and taste qualities, we recommend you do not cook truffles for too long. Truffles express themselves on gentle heating or when a thin slice of them is placed raw on a hot dish.

A few precautions should be taken to store your truffles properly:

Fresh truffles can be stored in the vegetable drawer of a fridge. Whether brushed or washed, you are advised to use them as soon as possible.

If the truffle has been brushed rather than washed, wrap it in kitchen roll and place it in a closed container. Store this somewhere cool. Clean the truffle with a little toothbrush just before using it.

A washed truffle does not keep as long as a brushed one but if it is vacuum packed then it will keep for about 10 days in the vegetable drawer in a fridge.

You can also put it in an airtight container (a sterilisation jar for example) with food stuffs such as eggs and rice and they will become impregnated with the flavour of the truffle.

Truffles may be frozen but this will alter their structure and make them less firm. Truffles can be frozen whole, wrapped in aluminium foil or goose or duck fat and placed in a jar.

If you want to freeze slices of truffle, place them on an aluminium sheet first. Then you can divide them into small jars that you can open as and when needed.
